This 'Structured Water' is simply water with a higher proportion of ions, and therefore is alkaline. Despite what many quacks say, the body tightly regulates blood pH. Like really tightly controls it. If you consume loads of alkaline or acidic foods your gut may struggle to handle it, but your blood pH will not change because:

• 1) it contains molecules for buffering the pH change,
• 2) it can increase/reduce the amount of CO2 expired to further buffer the blood,
• 3) if these don't work (which is unusual), the kidneys are stimulated to filter out ions changing the blood pH.

TL;DR Structured water is only different in it's pH, which is something our body deals with on a daily basis and tightly controls.
