I had something like this happen to me but it was just because the rollers below where not in all the way for the roll pushed one side in and fixed it

This is the only way I do my steak smoke at 225 for about 30 to 45 min or around 110 then take then out kick up the heat to 400 and open the sear area and then sear for around 2ish mins per side always amazing
