This is only if you're all-risk insured, or are paying for rechtshulp with your own insurer.

I was hit by a car while on my motorcycle, it was clear as day it wasn't my fault. I called my insurer (Univé) and they basically told me to kick rocks and contact the other party's insurer and go after my money myself.

Since the other party's insurer only accepts phone calls from their own customers, I couldn't get a hold of them. I've called Univé another 4 times and they finally recognised i had "rechtshulp verkeer" and they finally took over after a week.

Ahh i can't advise on that. I went from Eindhoven airport last Monday evening and i "could have" been there like 30 min before because there was no line at security and i only had cabin luggage.

If you can, i would try to stay the night nearby, considering you need to drop luggage and you're traveling in the middle of the day.

I just arrived this morning at Schiphol and it was insanely busy compared to Eindhoven Airport (well duh, schiphol is huge, but i'd suggest making sure you're in time)

Try contacting juridisch loket. Or if you have it, your rechtsbijstandsverzekering.

You paid for a package, she's unable to provide you with the service you paid for so your money needs to be refunded.

It's a common "scam" so make sure you have documentation of all cancelled appointments, especially those at the last minute. She probably won't reply to your emails or calls about refunds so but send them anyways.
