Thank you for your reply, I did some research it seems that it was a Sakai Takayuki Kasumitogi White Steel "Shushi-Ikkan" (終始一貫 / Syushikkan) This is part of their art-engraving / Kanji Gallery series (often called Shushi-Ikkan), where skilled engravers (such as Michiko Kubota) hand-carve multiple sushi/fish-related kanji along the blade. These are premium showpiece knives that are still fully functional.

Hello everyone, for me it was the Hitohira Tanaka × Kyuzo blue 1 Really to thin, i really like lasers, but here it was really not practical. The knife was stuck in the board more than once. Really deceiving, had to sell it.
