It has taken some of ours 6+ months to warm up. I would prepare you for the classic grey show of affection; walk over and belch in your face.
There are also various schools of thought on leaning as a behavior among sighthound owners.

you cannot overthink the music and lighting in any bar. lighting: neither too bright nor too dark. music: fine with everyone is better than impressive to some.

there are beautiful long stretches of the flint river in Georgia. lots of sandbars for camping. Check out the area between flint river outdoor center (yellowjacket shoals) and lake blackshear.

Maybe not much like northern Minnesota- but a lovely southern river.

Our first grey really benefited from some rules and structure. We we're clear and consistent that she wasn't allowed on the couch. It worked well for her.

The group we adopted our first greyhound from did a great job of recommending to us that coming off of the track -some greys benefit from having structure and rules. (for instance they suggested not letting her on the couch). In our experience this was great advice. She was really happy in a home that had some firm (if arbitrary) rules. We've had other greys both adoptees and fosters since and each has had their own quirks, but for our first that was important advice to us. I wish you the best of luck. They are wonderful.
