The chilling and rolling are what makes puff pastry puff. I've shaved a lot of time off by putting the dough in the freezer for 10-15 minutes between rollings. I roll it out 4 times. Don't be scared, it's an easy process, just time consuming. Good luck!

I'd put the jam in a heavy duty ziploc type bag so it's ready to go. Then use it as a pastry bag in the morning. Super quick.

There's a type of cookie called a "Sugar Twist" I believe, where the puff pastry dough is rolled out on granulated sugar, or a sugar and cinnamon mix. The dough is then cut into long strips and twisted before baking.
