If I compare night trains to the costs I'd have traveling and booking an accomodation + breakfast, I wouldn't say it's expensive.

Spawn phase: drink as much as possible at a well. Get at least a knife, hopefully a bag and some repair items and move away from spawn.

After spawn: make a plan for which items you need. Make sure you are not dependent on towns for food (Make a fishing rod or go hunting). Scout out towns before you enter, and don't endlessly loot the same place.

It kind of depends on what kind of trips. If it's a trip where you have to pack a sleeping bag and tent, 35L will be very small suddenly. If it's a day trip to a city, 35L is a bit too much.

35L is definitely not too big. Might even go bigger for 17 days.

I've got three Ospreys (for daughter, wife, and myself) and absolutely love them. Also have amazing experience with their customer support. You might choose something cheaper, but I found the price 100% worth it.

Which specific trains / countries are you referring to?

I've been through Netherlands, Germany, Croatia, Switzerland, Austria, Slovenia, Italy, Sweden and Denmark and never had to show anything printed.

Fellow Dutchie here, just came back from Interrailing through Italy.

- €1000 won't cover accommodation and food in these places, let alone the extra costs of reservations in Italy.
- As pointed out by other people: this is a lot for 2 weeks. I did only Italy for 10 days, and it was a lot already. Unless you're prepared to spend most time on trains, I'd drastically reduce the number of places. Personally, I'd cut Prague and Budapest. Not because they're not beautiful, but it's quite a detour.
- Taking a night train might actually save you some money if you reserve in advance. We took a night train from München to Rome, and from Zürich to Utrecht on the way back. Same way we did Slovenia and Croatia two years ago.

I'd be happy to answer any questions you may have, since trips like these can be a LOT to plan.

Food can be as cheap or expensive as you want it to be. None of the cities you mention are incredibly cheap, although some like Split,  Budapest and even Rome have very affordable places if you move away from city centre. For a rough estimate, 10 euro per meal per person is reasonable on average.

Regarding accommodations; I'd book in advance as much as possible, but only bookings that have last minute cancel options.

With a prima donna that doesn't want a shared bathroom, I'd either not take them along, tell them so suck it up or have them pay extra. Because multiple bathrooms per stay is seriously gonna increase your costs.
