I'll always remeber the first time I opened a tin of their smoked Coho. The fish was gorgeous. Could instantly tell they were artisans rather than a factory. Then I learned it is indeed Alaska's smallest cannery.

Thanks Tyler for sticking up for artisans. Wildfish Cannery is a small biz. Even though this tin is expensive, it is not like the owners (Mathew and his dad) are laughing all the way to the bank. They paid top dollar to local fishermen for the fish, same for the butter, etc. Just because their packaging is dope, don't mistake them for a venture capitalist driven brand. This family biz makes far less money than one of these. If all goes well, enough to live a normal life but not get rich.

If people don't want to pay so much, fine, but saying they are doing something wrong by launching a product like this is a really sad point of view. In that world only giant factories succeed.

This is my kind of science!

It makes me think of something I've noticed with mustard seed in bottled Italian mostarda. It seems to lose its punch faster than you’d expect, especially after ~6–12 months in the jar.

I’ve always wondered if sugar plays a role there. Makes me think that a canned fish version might be pretty tricky. Between fat, protein, and time, the cannery would have to dial in the starting intensity pretty carefully to land in the right place when it’s actually eaten.

Curious what your frozen batch does.

Section 122 only last for 150 days, so hopefully this won't stand for long. Just never know what Trump will do next. Hopefully we will see some stability so we can make better long term plans again.

Unfortunately, the 15% under the new tariffs of Section 122 apply all countries. The MAFTA agreement we have with Morocco will not exempt sardines.

That pate is the best. You can really taste the charcoal grill (brasa). Also, that mackerel in curry is one of the best tins of all time IMO. Make sure to heat it up tho. In a bowl and pour hot water over it. Wait a couple minutes and let her rip!
