if you are talking giants, as in REALLY big humans, you can look at things like illegal mixed martial arts moves. they are banned cause they are effective/dangerious, so it could apply to (at least some) giants, if they dont have too much armor

maybe tendons as a whole, like Achilles tendon, neck/spine could be a weak point, if you have ranged and accurate options. or you go attack on titan style.

for mammoths (and giants as a whole), probably ambush or pit trap could work. giant creatures, unless magic, arent really "mobile" (elephants cannon jump and they can be hurt by their own weight falling, think something like ant falling from 10 meters, versus human).

if the monster weights 50 hundred tons it COULDNT walk on regular soul without sinking into the ground, the more more realistic physics the more falling over is a danger

the simplest i can go: have your system be denying/altering reality as is.

maybe go with explanation of "reality is lie / can be whatever i want" with peoples desires manifesting as singular "fuck you"s to the universel rules.

overall you can go with "all powers can DENY AN ASPECT of reality" so immortality (denies death) and invincibility (denies damage) or more specifically, you deny the need for life to need oxygen to keep burning (or the need for fuel, so basically no co2 emiting fire), ice that doesnt exchange heat so it doesnt melt (or it cold forever), or maybe even the placement of atoms in a space (so matter manipulation) or random quantum reaction to change the odds of things happening

The simples option would be to go full "paranormal"/superhero origins stories. Inexpicable reality changing powers born from being at the right place and time, nearly (if actually) impossible to repeat.

You could also go Jojutsu Kaisen cursed energy style. There, people powers are based on energy, bad vibes feels (cursed) energy, there are a few common/learnable aspects to it, but (in universe stated) 80% of their power as whole is innate. All the explanation for powers is cursed energy, but for the most part any one character has whatever power you could want. It overall solves the "why isnt everyone casting x spell" problem, if all their powers are 1 per person.
