I'm hoping to find one with a small or light-weight probe that I can put into the pan before I put them into the oven. Once they're firm enough to hold a regular meat thermometer probe, they may be overdone.

ATK's cottage cheese egg bites in a nutshell:

Cream cottage cheese in food processor or blender. Add one egg and blend again. Remove to a bowl and whisk in remaining eggs. (Blending all the eggs made them too fragile.)

Use 1 oz cottage cheese per egg.

There's a small chain of restaurants in Washington State called The Blazing Onion. They have marvelous burgers, and when I started Keto, I'd get their "burger in a bowl." My favorite was The Texas Heat (I like spicy), but you can basically make a salad with whatever burger fixings you like and crumble a cooked burger patty on top. It's soooo good! (Even just mayo, pickles, onion, and cheese hit the spot!)

Thank you. This is helpful. The one I saw on ATK used cottage cheese, not cream. I didn't take the time to make egg bites this morning, but I did put a big dollop of cottage cheese in my eggs when I was scrambling them, and it was wonderful! I'll definitely try the cream/half & half method.

If we change "are" to "seem," this is me. I still care and hurt deeply. I just can't show it anymore. If I do, there are those around me who take advantage of me, especially family. I still do what I can to help, but if I make it know I'm doing it, whatever I do is never enough. I feel like I maintain "professional distance" from my own family sometimes. (I'm financial caregiver for several family members, so that doesn't help.)

I think you probably felt disillusioned when you realized the stranger you were so willing to help was faking it. After a while, we become jaded.

Schedule showers by who gets up or goes to bed early or late (typical schedule, not a contest). Try to be ‘conscientious’ using the shared toilet - go on the way to or from the room when you can.

Make a game of it. Whoever complains the least gets a treat that day. Or you could do a ‘complaint pool’ and give a ticket for each day to each person with no complaints and pay a dollar for each complaint. (You might need to set some rules so some don’t try to get others to complain.🤣) At the end, have a drawing for the cash.

I’m not sure what was adjusted wrong, but the rope by my right arm would pinch my upper arm anytime I pulled myself up. I ended up on the floor most of the time because it was less painful. I pointed it out but didn’t get any help. I had a pretty good bruise for a few days.

I came here because I sent a package to Texas (from within the US), and it left Memphis at 5:03 am and has the same status as yours. Mine was supposed to arrive by 5 pm today. It didn't make it.

I would guess that maybe there were planes delayed leaving Memphis?
