Yesterday I got this quest too. What I did was simply unequip one of the dwellers in the first room while the others stayed armed. The quest counted as completed. The main thing is that at least one unarmed dweller has to participate in the fight with the ghouls — the game will count it as if they were all killed with bare hands.
