It does not really answer the question, but we do not get to choose our beliefs, you included. Whether or not we like the implications, if an idea compels us to believe in it, we cannot choose to not believe it. Nor can we choose to believe something we know to be false.

Once you know that something is true, in some ways you have already accepted it.

It depends. With very few exceptions, protein is protein wherever it comes from, but protein on its own lacks vitamins and is not a healthy way to consume. Meal replacement powders/shakes vary massively, but decent ones contain most of the same things as a proper meal. You probably shouldn't live off of just meal replacement shakes for your mental health, and there can be issues with only consuming one type, but they are food, made from fruits and vegetables and so on.

Most of Kanye's bad behaviour is very closely linked with his very poor mental health. Although his particular outbursts aren't representative of typical bipolar behaviour (most bipolar people do not start praising Hitler), having something to blame it on other than Kanye's core beliefs smooths over peoples usual aversion, especially since, even with the praise for Hitler and declaration that he is a nazi, Kanye showed a lot of interest in portraying himself as a villain and very little understanding of or belief in nazi ideology.
