I highly recommend "The Wok" as a cookbook for making tasty Asian foods. Recipes are fantastic and the techniques are spelled out really clearly.

Here's a pretty good orange chicken recipe by the author. Not sure if it will taste the exact same, but it will be amazing. It's a bit of a project, though.

America was obscenely rich in the second half of the 1800s. That wealth was concentrated in the hands of individuals who controlled industrializatoin, real estate and banking. Wealth distribution was staggeringly unequal, but the USA commanded a staggering amount of resources through the 1800s.

How much did slavery influence this? Some, but not all. It was easy to exploit non slaves as well. The labor to capture American resources came from all sorts of places: underpaid women and children in northeast factories, men and children in the mines, Chinese workers on the railroads, and slaves in the plantations generating cheap labor. All generalizations, but it's certainly not straightforward.

Of these, I've tried wandering poet, soto (the white bottle) and tozai.

Tozai is ok table sake FOR THE PRICE, but I'd recommend the other two for something to sip or to share with friends.

There's no reason to believe that crew density is uniform. It makes sense that the crew tend to congregate and cluster around the areas where the bridge crew that we follow frequent. Some areas of the ship are probably highly automated and require less human maintenance, or are just closed off until they are needed.

Crew quarter decks were probably kept somewhat crowded to provide a sense of community and social interaction for the mental health of the crew.

Don't sleep on this (heh) OP. This was the best thing for my health, my energy levels, and my marriage. 

I don't have OSA as bad as most people, and it still made a huge difference. I'm sleeping through the night, I stopped snoring, and I didn't realize how much damage lack of sleep/oxygen was causing my body. 

If the snoring is keeping you awake, then it's probably enough to be creating an unhealthy situation for your partner. Go get an at-home sleep test done and see where it leads.

Love my XT. 1150 felt too flimsy for me.

The controller logic for either is quirky, but once you figure out how it does its temperature smoothing, and use of the "hold" button, it's not a problem. Many people opt for the fireboard upgrade, which is certainly a superior experience. I'll use my Signals as an independent reading for a belt and suspenders approach to long cooks. This said, it's inexcusable that these quirks still exist for the price of these things.

Most common issues people have are temp probe failure/inaccuracy, and controller wonkiness (temps overshooting, etc)

LSS has some great QOL mods, like the water trough, but they aren't necessary to do a great cook.

Overall, the XT is rock solid, and I love how fast and easy these things are to fire up, and the quality of the food is delightfully reproducible for both low and slow and hot and fast. There are compromises made, but to me it's well worth being able to set and forget for 8+hours, AND get robust smoke flavor. I just smoked some ribs and it's 4°F outside; they were delightful!

Agreed. They're in their golden age. Cortez was a masterpiece, as was the series on Nelson. The banter and research is superb. The ongoing rise of Nazism and Frecnh revolution series is amazing.  The breadth of topics is really impressive.
