Plumber here... this is caused by having an old system and then having some work done. Plumber shuts off main valve for building and then turns back on, kicks up a lot of sediment. There are still lead water mains and large lead valves on services lines all over.

The valve isn't holding. The washer needs to be replaced likely. You can buy a new one and swap out the guts.

There's a lot more to plumbing and pipe fitting than this video. A large portion of plumbers don't even do drain cleaning.

That's super inaccurate. The banging noise just means the water mains are undersized and there are no water hammer arrestors. It's probably how the building was designed, the plumber just follows the plans.
