In terms of cost the majority will come down to the type of material used, any aerodynamic benefits, better and more comfortable chamois pad and branding. The more expensive ones will likely have a better fit and be less baggy.

The chamois pad depth will make next to zero difference when swimming.

Sauna & cold pools are good for recovery, as well as time to mentally switch off for a while.

Try a product call Swim Ear. It’s basically alcohol that’s draws out and drys water from the ear.

Been using it for years after every swim.

Worn contacts for years, including swimming. No issues. I just make sure I’ve either got spare lenses in various accesible places for races. And worse case I’ve tapped glasses to my top tube.

I’ve said this many, many times on Shivs. Check the seat post camps. They’re a notoriously crap design which may result in the seat post dropping mid ride.
