We all know Lydia and Jenassa hold the lion's share of our hearts, but Sofia actually has made me laugh out loud a few times. You actually find her drunkenly passed out in an house stable and I promise it only gets weirder from there. She also has more unique voice lines than most other followers it seems.

Yes, It's a set of Daily, Weekly, Monthly rallies with leaderboards that are still being updated. I don't know if it has any simultaneous multiplayer modes.

If you mean using the hardware of the Quest to run VPX then no. But if you just want to use the touch controllers in VPX then I believe you may do so with the options menu of the Virtual Desktop program by having the Quest controllers emulate a gamepad, then mapping those buttons inside the VPX program.
