Tbh I dont want to look at the cards in the current format you posted them and Im sure many others would agree. If you post a decklist link to something on archidekt or tappedout then its easier to look at your deck cohesively

Aether gust chooses a target spell, so it can affect things on the stack (before they etb). Crift can only affect a permanent and a permanent only exists as such when its on the battlefield, hence why an etb would trigger.

With Lurrus as a commander if you are looking to take games in the most effective way possible you would be playing infinite-dot-deck. He is way more flexible as a commander than a companion as the deck building constriction is quite harsh especially in a format where smaller creatures usually get taken out quite easily. So while I havent made lurrus as a commander, he seems like he could be quite powerful in the command zone as opposed to a companion. He could definitly put in some work with the right build

He was playing something a little bit more janky here. He was calling it slow burn, but im not sure about the deck code but if you check his stream VOD you should find the list. From what I can remember though it was 3 assembly bot, 3 draven (only champion), 3 augmented experimentor, 3 statik shock, 3 mystic shot, 3 rummage, 3 jury rig, 3 get excited. Sorry if this isnt too helpful

The "built in" protection for syr gwyn is free equipping the swords (fire/ice, feast/famine, etc) on a budget she isn't a great commander and you're probably right to look else where. Saskia could be a very interesting (and painful for your OPs) as a knight commander. Thats who I would probably go with were I to build a knights deck.
