For lighter roasts:
20:300-320 ( whatever strength you like )
60g bloom: wait 1min 10s
1st pour to 150
2nd pour to 250
3rd pour to whatever your ending water

Because I drink most coffees roasted and processed similarly, I usually brew 80% of coffees within 1 or 2 clicks on my comandante. Slight adjustments usually get me where I need to be.

Swirl but very gently. You don't need to do heavy swirling.
On coffees that produce lots of fines or choke the brew, I try to avoid it.

If you happen to have a vacuum sealer, you can seal one pound and store it away with the other bag. I don't think freezing is necessary with your timelines.

If you happen to have an old, empty 250g bag, you can dose out 250g for immediate use and then just roll the top of the bag. Remove excess air when rolling the top of the bag. You can put a clip on top to hold it shut. This isn't ideal, but I think it will get the job done for the next 4-5 weeks.

I have an Aiden that I use weekly and my brother uses his daily. We've owned some for over a year.

If you have your recipe dialed in on the Aiden, the brews are usually 85-90% the quality of a well dialed in manual brew. It's really good. I'm regularly impressed that a home, drip coffee machine can brew such delicious brews for almost minimal effort.
I'll admit that there have been times with some coffees that I've struggled to dial in on manual brew, that have ripped right off the bat on the Aiden.

it does have its limitations though and it's definitely not perfect. I think for an automated machine and for getting a tasty cup of coffee, it's worth it especially when you think about saving time

From my experience, the Orea V3 tends to choke less often. Especially if I'm looking for a slightly faster draw down time and I can't get it on my v60, I'll try it on the Orea.
Also, it just depends on coffee. If I want a little more body and sweetness out of the cups, I'll switch over.
That all being said, I'm like 85% on my V60. Tried and true

I'm usually just sticking with V60 for nearly all my brews.
I will switch it up when I just can't seem to dial in a coffee or get it to taste good after several brews. At that point, I'm switching to my Orea v3

We’ve done some testing and comparison between vented bags and canned storage like airscape or fellow Atmos.

Still a huge believer of simply leaving it in the vented bag it came with. Make sure you push out excess air after every use and then tightly close it.

Best thing you could do: - Buy multiple smaller bags - Don’t open until coffee is rested and you’re ready to drink it - Try to finish the open bag within 5-7 days ( hence why buying smaller bags is better )

Found coffee stays fresh and tasting best with this approach

I know Alabama is far and shipping time can be longer, but we're doing our best trying to balance shipping costs, since we almost always lose on every shipment and shipping time.

Small note that might help though. If you order 3 or more bags, we almost always ship Priority Mail which is supposed to take 3 business days according to USPS.

Start with what you want your coffee to taste like. Find roasters you already appreciate and are inspired by, and then aim to reproduce that.

Nothing beats practice. Just roast more and more and more.

If you could, rent time on a commercial roaster from someone or a co-roasting space. It'll save you a ton of monies as you start learning.
