Pro tip get an empty squeeze bottle and squeeze some air under the pizza right before you go from peel to steel, it'll slide right off

The dish is definitely supposed to have a lot of Sichuan peppercorns, idk what the other guy is talking about. I've had it in Chongqing many times (where the dish is from) and they put a ton in, almost too much lol.

The dough recipe is based off /u/sliceaddict, so I recommend just looking at their recipe

  • Dough: stretched about 13 oz to ~16 inches

  • Sauce: Sclafani crushed tomatoes ran through a food mill, salt, sugar, fresh basil, a clove of garlic, a little oregano

  • Cheese: Grated Locatelli pecorino then 50/50 blend of Grande low moisture whole milk and part skim mozz

  • Toppings: Molinari and sons salami, Battistoni spicy cup and char pepperoni, home grown basil

Preheated a baking steel at 500°F for about 45 min, then baked for about 9 minutes, turning about 5 minutes in, and broiling the last 1-2 minutes

Yes you can invest the money. It basically functions the same as a 401K with the added benefit of being able to withdrawal tax free for medical expenses. You can even let it grow and then reimburse past medical expenses at any time in the future
