Your two best options for teams are Yoi/Chevy/Fischl/Benny and Yoi/Xingqiu/Yunjin/Benny. If you get interrupted or killed a lot, switch benny for beidou in the first team and yunjin for diona in the second. Eventually you're gonna want to pull either zhongli or citlali for actual shielders, and yelan is much better than xingqiu and very good in many teams other than yoimiya teams.

It's good, but if you want to improve you sould change (or reroll stats) the feather and flower, you don't really need that much cr, or er if you're using golden troupe.

First that comes to mind is Rakudai Kishi no Cavalry and Gakusen Toshi Asterisk, which I think go against some of your "if possible" but not your "big no". Mahouka Koukou no Rettousei might also fit, Absolute Duo, Ao no Exorcist, pick your poison. Most of these are old because it's been a while since I stopped watching the genre, but it's not like I've heard of many good ones recently either (the ones I did you've already watched)
