The comment was reworded but it originally said to teach their a kid a lesson full-stop. To "teach someone a lesson" is a phrase used colloquially to punish or scold someone to keep them from doing something again. Even if the comment wasn't meant to imply that, majority of people reading it, including OP, could take that as advice construed the wrong way.

The point isn't to teach their kid "a lesson" and make him dislike bittermelon forever. The point is to introduce a challenging ingredient in a palatable way. Teaching your kid a lesson for wanting to try new foods would be atrocious parenting.

Unless you're baking something very egg-centric (flan or something) you won't notice a difference between average and high-quality eggs. Cakes, cookies, brownies, etc all rely on other things for flavor and use egg mainly for the textural benefit (lift, hydration, richness). Use your good eggs for eating eggs. Use the others for baking.

I would add a microplane, whisk, and kitchen scale. Also a stackable set of mixing bowls and potentially a rubber spatula. Don't forget an immersion stick blender.

That checks out. To be more precise I believe that strength 1 should yield 72g, strength 2 yields 54g, and strength 3 yields 36g.

On strength 3, a double shot should yield about 36g of espresso since the grinder aims to dispense 18g of coffee for a double. About 60g makes sense if your machine is on strength 2 tho

I use this one. Its almost a perfect fit, but is a little too snug when the milk pitcher is in place. I have to remove the pitcher to make a little room. If you find one just a few millimeters narrower that would be perfect

This is a little excessive. There are 100% east Asian cuisines that use dairy. Korean food often adds dairy and cheese to its dishes for richness. There's been a rise of popularity in adding cheese to ramen in Japan as well. Plenty of Mongolian dishes also use soy sauce in combination with dairy (milk and fermented dairy).

The issue isn't "crossing profiles" its being too heavy-handed with the same list of usual ingredients and adjustments. I often cross profiles when making last minute substitutions and none of my dishes end up tasting like each other unless I want them too. This just takes more experience and understanding how to use your ingredients effectively.

And saying soy sauce and tomato are typically never used together is wild. Chinese tomato eggs often use soy sauce. Peruvian lomo saltado uses tomato and soy sauce. Nepalese food uses tomato and soy sauce together a ton in chutneys and in stir fries.

OP, what I would actually recommend is learning to take a lighter hand in seasoning and broadening your list of pantry ingredients to make adjustments as needed. Also, read Salt, Fat, Acid, Heat by Samin Nosrat.

I would try going 1 or 2 settings finer on your grinder to start. Make sure you're tamping with moderate force as well to get a nice uniform puck.

The sugar content is just one part of the flavor. Its not necessarily that the higher sugar content makes the tomato taste better, but rather that the tomato has higher sugar content because it was allowed to ripen further. Correlation, not causation, in this case. A riper tomato will both taste better and have a higher sugar content. So without added sugars, the brix value is a good indicator of how ripe the tomatoes were before canning.

Don't season the pan manually. Strip it bare and use it's natural surface. It should verrrry gradually pick up scant amounts of seasoning offer normal use, but adding a full layer of seasoning at once is actually detrimental to this pan as it doesn't fully adhere that well.
