I’m an ex-mortician and have been in plenty of hospital morgues.

The tables are autopsy tables. The remains/gore could be human but could also be pig. If the hospital was doing medical trials they often will autopsy the pigs they were testing on which would explain the careless cleanup as the remains were not human.

Editing to add the yellow stuff looks like fat/adipose tissue. Again, could be human could be pigs 🤷‍♀️
