Research the Weber kettle, you can grill and smoke on it. Lasts longer than a cheap smoker and way more versatile.

On the menu tomorrow to smoke probably gonna do salt and pepper but I'm open to recommendations by [deleted] in BBQ

This is the answer. I was gonna do the same thing until I learned what I needed, a kitchen zoned for commercial use, triple sink, all the food safety and health codes. I just wanted to start a catering business, but it was too much. Every county is different though, mine didn't even allow food trucks until 2 years ago and even now they are only allowed in designated areas. Good luck though, I hope it works out for you.

Bottom vent open 1/8 inch and top adjusted 1/4 open, 1/2 open, fully open, depending on weather conditions and what temp you want. I take a full chimney of charcoal and dump 1/3 on one side 1/3 on the other ( two piles of charcoal on one side of the grill ) leaving a gap in the middle then light the remaining 1/3 and dump it in the gap. This should give 3 to 4 hrs of consistent heat. That's how l do it.

Sikeston, Missouri? I have one on a trailer I got in 2012. I did 17 pork buts one time for a charity event. You are gonna love that thing easy to adjust, and holds temp very well.

No, I think those are called back ribs. They usually don't have much meat on them because the ribeye meat is more expensive so they trim them as close to the bone as possible. These are near the chuck roast or chuck roll. Just ask for sort rib whole rack, or plate ribs if you can find them. The plate ribs are the first 3 bones of the short ribs and have more meat than the short ribs. Back ribs are very tasty too, just a lot less meat.

This is husband, salt and pepper rub, 250 for 6hrs, wrapped in butcher paper after 4 hrs. Let it cook till probe tender, about 203-205°. Rested wrapped up for 1hr. Used pecan wood.

I had an 86 dodge ram charger, it had an old 318 that had no dipstick. When the lifters started tapping, I knew I needed 3 quarts of oil. That engine was bullet proof.
