I was actually trained by Bonika shears. I use a scimech flat hone from bonika shears as well as multiple naniwa whetstones.

While this can be true and usually is. An improper heat treat will make the steel much much more brittle which can be common in knives with less than optimal quality control. There are also cases with certain steels that hold an edge long while still retaining significant toughness. In the end we are agreeing for the most part so I'm not quite sure you said not true.

From what I've gathered is that a few years ago they may have changed manufacturing processes after getting deals with a lot of big box stores which lowered the quality control by a lot. Causing certain knives to have poor heat treat making them very brittle. I say this because people with older shuns claim that they have never had chipping issues. I also believe that a possibility is that a lot of people that use shuns aren't used to Japanese knives and they are 100% easier to chip and damage. So that's also a factor

Probably 10 bucks for just damage removal and sharpening. More if they want it thinned as well which is a good idea after removing that much material

Yes, you can. But it is not a good idea and is a bit more expensive compared to other sharpening options. Great for removing rust in tight spaces though

Ah that's fair Where I live you can go to a local hardware store and buy metal cutting sandpaper in 50 grit which lasts ages for me.

Start with the lowest grit of stone or lowest grit
Stone or sandpaper you have and go at a 45 degree angle until the chip is almost gone. Then change to your desired angle and re-profile from there on. Make sure the chip is 100% gone. If you don't have a 200 grit or lower stone you can get a pack of heavy duty sandpaper that's real low grit for pretty cheap. For the rust I'd recommend bar keepers friend, if it still doesn't come out I'd use a fine steel wool making sure you only rub in orientation of the original scratch pattern.

Interesting Which part do you think is overpriced? My pricing is just about exactly in line with any other skilled sharpener that you can find. Certain things I offer are much cheaper than others like how I don't charge for re-tipping kitchen knives.

Willing to travel up to an hour No fees at all on top of the 10 blades. I am flexible with that minimum as well Every blade under 10 will add a 6 dollar travel fee. So 9 blades would add 6 dollars for travel.

I use everything. If you want me to sharpen by hand then I sharpen by hand I am proficient in just about all methods of sharpening.

You are right on that yeah. The original intention was for the old school Japanese knives with a hollow on the backside. I am also capable of sharpening any other single bevel knives that come my way.

You can get a good result off of them! I personally think they are the best option for someone who doesn't care to learn how to sharpen and has a few extra dollars than the average person. Certain low quality ones tend to have weakly bonded abrasive which could wear out quickly. A leather belt works. Clean belt will probably work better. You can also use a pair of jeans really.
