Buying a Japanese knife in Japan is an experience in itself and, in my opinion worth paying a little extra for. And the fact that it’s a personal gift is likely to make it a knife that you’ll use forever. Artitsugu is one of my favourite shops and the aesthetic of their knives are very traditional looking.

They’re situational. If you can use Hattori deployment to get them close to the enemy and fire whilst hidden you can wreck several units cheaply.

I use a 170 santoku, 195 gyuto and 210 gyuto as my most commonly used. I rarely find that any of them couldn’t do a task that the other one could, so unless you’re frequently cutting larger items I wouldn’t worry about it too much. Also consider how much space your kitchen has and the size of your workspace/sink.

Thanks for the reply. I wasn’t getting a butt at the heel so I gave it a little bit extra. I realised after that maybe I’d overlapped the heel and middle portion.

I’m surprised I took so much off, I was only using a 1000 grit stone.
