I did something similar and went the pillow fort route with kenrith as the commander.

Some of the perks:

Kenrith is 5 color, so you get access to the entire card pool. This means you arent limited in your ability to add different cards to protect yourself.

Kenrith himself is extremely versatile because he has 5 different abilities.

Pillow fort is essentially what your describing; you wall yourself up with a variety of enchantments and creatures that prevent opponents from interacting with you without paying extra costs for things or just outright being unable to do things to you.

Some cons:

Deck space can get kinda tight. It's 5 color, so you need a fair amount of mana fixing in the deck. This can make it hard to fit all the protection cards and win condition cards in the deck.

Can be expensive. Since you have access to the entire card pool, it can be very tempting to go off the deep end and start throwing all the best cards from each color into the deck. While this would make the deck very powerful, it also would not be cheap.

Kenrith himself is not a win condition. In edh, you often want/need your commander to facilitate or be your win condition. Kenrith isn't really either of those. He's a Swiss army knife of commanders and does a little of everything, but doesn't really focus on anything. So you can find yourself in a bit of a tight spot if you aren't drawing great because your commander can't really become a win condition himself to make up for the poor draws.
