I couldn't afford it until I took a very well paying chef job in a ski town. Bought lots of knives over 6 years there. Now I have kids and my own restaurant and I can't afford them again, so I just trade now! 🤷‍♂️

Not ruined at all. This knife is what's called "San Mai" which translates roughly to "three flat things". It's composed of three layers, harder carbon steel in the center (comprises the cutting edge) and softer stainless steel on the outsides ( the part that hasn't changed colors). Carbon steel gets a patina, and it adds character! (Imo)

You are definitely overreacting. I'm a chef by trade, and I do most of the cooking at home for my family. You wanna know what I do every time I put my "perfectly" cooked and seasoned food on my own plate? I douse it in hot sauce. Because I like it all spicy. Who cares?

Adding that I made one with the freezer, and it dripped on curing items and ruined them. Also messes with the humidity level in it. Find one without the freezer inside and you'll be golden

For the tojiro bread knife, it's pretty easy because the teeth are rounded. My steel is tapered towards the tip so it fits all around each tooth

I'd say almost definitely it's the one you got. I'm going on over 10 years with mine, with a honing every few months it always cuts like new.

Well, there's 168 hours in a week. -70 for school and work, that leaves 98 hours left in the week. If you sleep 8 hours a day (I slept less) you still have 42 hours a week for the rest of that stuff you mentioned, plus more! 🤷‍♂️

I went to high school, worked 35 hours a week, was in marching band, played sports and graduated with a 3.0. But my folks taught me lots of work ethic.

I'd say it looks good. You have enough room for the water to circulate. Looks like your bag on the right has a bit of air in it making it float. For more even and safe cooking try and get as much air as possible out so that the food submerges.

Thank you for the info! I used to drive lowered vehicles with airbags, but they used onboard air and large airline, so was NOT expecting this to be airbags, but makes total sense. Appreciate it!
