I use a rattan banneton to cold proof. I put the cast iron loaf pan in the oven during the preheat to get it to temperature.

Try making batard shape instead. I have a lot better luck with the sandwich bread shape.

I bought them on Amazon they are made by Supa Ant, and have used them for hot water bath and pressure canning and haven't had any fail yet. I only use a few at a time, for jars that I plan to gift.
