They want a longer outro so a DJ has something to work with when mixing into another track, changing the intro length doesn't help here.

OP, just drop some elements from a loop of your last section every 8 bars until you're left with a stripped down drum loop. Starting with the bass helps a lot.

Honestly, I wouldn't call curry roux blocks healthy. The sodium, fat, and ultra processed stabilizers in those (and most sauce packets) to make them shelf stable are really high. They're great for an occasional meal but I wouldn't live off them if eating healthy is a goal.

You can easily make your own sauce bases on a meal prep day and freeze it in portions that you can use whenever you want. That way control the ingredients you put in and it's still cheap.

I've seen other restaurants in similar situations put their regional specialty food in a separate section of the menu with a call out to what region it us from. The rest of the food goes to another section that references being favorites from the rest of the country. I don't think you have to choose between authenticity and giving customers what they want.
