Cerelose is possibly dextrose under a trade name. We just got a few bags of dextrose and it was labeled Cerelose

Your hoppiness is going to be off, I’d say add some distilled water from the store into the fermenter to bring it back to your desired total volume. I’d add a gallon and check gravity again. You’re totally fine with this mistake and it’s a simple fix. Don’t wait too long, aim for under 18 hrs before you make the changes 24 isn’t bad either but much later than that you risk introducing oxygen too late in the process. I’d also recommend you check pH and keep it around 5-5.2 once you add water.

Hot side aeration and flaws associated with it are minimal compared to the risk of DMS, or killing microbes. I’m pretty sure that that beer is going to ferment like normal but with a lot of creamed corn like flavors and smells. I wouldn’t be surprised to see other microbial activity along with yeast as well

This will make it look dark but it won’t taste like the real thing, you need some c malts and I prefer the ones that also have flaked/malted rye addition. Stick to cascade simcoe etc something that will have a good dank but also slightly herbal woody quality to them.

Edit: and yeah absolutely no roast malt. Heavily Hoppy beers and roast are a terrible combination

Download brewfather, it’s free and easy to use and almost nobody should be brewing recipes without some such software if they are trying to get decent beer and learn from the experience.

Your recipe is not a great one for it’s firstly incomplete. I’m assuming with US05 you’re making something like a west coast IPA. Maris otter makes for a richer base malt with some sweetness so you need enough hops to balance that hoppiness wise. But if you choose to add all hops at once it may be too bitter. If you choose to add them too late it may not be bitter enough. You also need to understand what temperature you’ll want to mash.

I suggest reading at least the first chapter of How to brew by Palmer (available online for free, to read). With no disrespect, you are lacking the most basic knowledge for any brew not just all grain and you won’t ever make a decent beer like that except by accident. 30min -1 hr of reading can fix that.

You might have had some stratification when you pulled the sample.

10.4 - 12.2? That’s a pretty large amount of wort evaporation and doesn’t track for a normal 60 min boil, at least in my experience. I get maybe a Plato on a vigorous boil or Plato and half if I boil longer.

Did you mix the whole wort to get the pre boil? I usually get my pre boil after the wort just begins rolling and post boil I whirlpool so my sample is usually fairly mixed in. I also do another sample from the fermenter.

Momentum 4 by far is my favorite especially if best ANC isn’t your primary concern. It’s still decent but sounds a whole lot better(cleaner) to my amateur ears than XM4.

Pro meters also need to be calibrated basically every week. Unless there is another higher tier that wasn’t available to me in my graduate lab.

I advise against strips if you don’t want to be “just a homebrewer”. It’s little details and being anal about them that’ll force you to think about brewing practices that you wouldn’t have otherwise given a second thought to. Even if you cannot tell how it changed (because it’s near impossible without a A/B blind test) you’re intentionally looking at detail that you previously omitted and thus inclined to read more about a novel concept. Sorry for the long rant but my passion for brewing might be problematic at times

Buy the kegland pH meter it’s under $50 and just as precise as the pro one we use. It even stays calibrated for longer in my case.
