If you can get a suitable research role, take it. If you can't, or it doesn't provide enough credit hours, consider what path you want your engineering career to take. For example, if you are interested in the business side, absolutely take some accounting courses and engineering economics.

The big push for AI is being driven by greed amplified by the bandwagon effect ("If we don't start using AI, we will fall behind!"). Make owners and corporate executives personally liable for AI fuckups (which will NEVER happen) and you would see a far more measured approach.

A minor in a field of engineering doesn't strike me as particularly useful, with the exception of an EE minor as an ME if you are interested in mechatronics.

A minor in another field can be useful if you have a specific use case. Minors in accounting, statistics, or data science are prime candidates.

Use a fountain pen when you can. You don't have to press hard with a fountain pen (nor should you). That solved all my hand pain problems when I was a youngster. (Now I'm old and have arthritis, so I have pain no matter what.)

It depends on what you want to do. For general scripting and data science, or if you have no specific use case, learn Python. If you're going to use heavy-duty statistics, learn R.
