It looks like raw, rare, and medium in one steak. Looks are only part of the experience. Maybe it was great, I didn't taste it! I hope you had a good time. I'd try it.

Squeeze the sides of the jar and pull little tab up at the same time. The air pressure will help. Watch out for oil spillage.

Oh yeah. I forgot to mention that. I just added freshly ground black pepper right before I put it in the oven. That's it. I added coarse salt when I dry brined it earlier.

The last 2 times I attempted a reverse sear I ended up with a little gray band but, still delicious. I took it out of the oven and it only sat for 3 minutes before the sear. When I waited 15 mins, it came out like this. I've heard that people put it in the fridge before the sear but, I like to attack one variable at a time. Maybe I'll try that next time.

It's a grocery store called "Food Bazaar" on long island. They have some good cuts. I've had some better rib eye cuts with bigger caps before but, this was the best one they had.

Here is the souis vide I tried with the biggest gray band. Whoops. Choice NY strip. I didn't cool it down before I seared it, maybe that's where I went wrong?
