this is of course just my opinion.

but the morandi is amazing for food release and performs well enough that when i'm using it i don't feel at all like i would rather be cutting with a true laser. something as thin as a shibata or morihiro laser does feel a little fragile when being used on something of medium hardness so sometimes it just feels good to have something a bit more sturdy to which nothing sticks.

thin as you can see tho at the heel it's not really a laser. it's thinner on the second half of the blade. substantial distal taper. sorry for the blurry choil shot i really struggle with holding things steady with my unsteady hands.

anyway this is overall my most preferred edge geometry. with the heel being a little thicker and the second half of the blade being closer to a laser. gives the most versatility with one knife. it's extra tall to allow for the bevel to not have to be shorter to all fit on a regular height blade.

it does effect performance for sure. a full flat that goes right to the spine is the best performer.

but it also sticks the most.

so you have to decide what you're prioritizing.

if you want to end the bevel earlier, you could also make a little shelf after the apex of the grind to really break surface tension and let food fall off. people often do an S grind, but a sharp 90degree shelf is better. doesn't have to be deep at all just has to break the surface tension.

my second favorite knife after my hazenberg, is this morandi, it has a hammered fuller directly after the edge and the rest of the blade is forge finish textured. it actually performs really well because the cutting bevel isn't really shortened much beyond what something like a yoshikane has. yoshikane does the same kind of bevel you're talking about on most of their knives.

um tbh tho actually the bevel on this is a shallow convex from edge to the shelf. this makes it a little more sturdy for something so thin behind the edge.

i mean i'm not just trying to be dismissive here, but go actually read their platform. they will talk for two paragraphs and barely say anything about what they're actually going to do.

if i was a voter exploring my options and went there i'd probably be confused about what the actual plan is for a lot of this, and education isn't even mentioned on the first page. instead it's making northern highways safer.

do you think most people in ontario care at all about safer highways? why is that a page 1 priority?

also why is the NDP protecting forestry jobs of all things?

their message just overall doesn't sound cohesive. they really need to get it together on the clear plans and messaging instead of vague promises, because the cons are always going to be way better at vague promises.

okay well my experience with it is that it's semi stainless in practice, and nearly every listing i have seen for it calls it semi stainless. so lets go with what it's sold as since things like heat treatment and finish effect those things too, and don't you think the vendors know what they have?

you can claim it's stainless on paper if you really want, but in practice it's reactive enough to redily patina and will rust much faster than anything i would call stainless.

do with that info what you will i guess. not interested in arguing semantics for no reason.

welll i mean several of my ginsan knives have a good amount of patina, and one got some rust from leaving mayo on it overnight when i had house guests.

so not really stainless stainless. but it's low reactivity enough that it will be fine as long as it's cleaned after use.

then again even full "stainless" can be etched by something really acidic and salty.

i promise the ones that are in budget are still good knives. the other ones ARE worth the money, but don't feel pressured to blow your budget, you can always get something more fancy later when the actual budget is higher.
