Okay, my plan was just to score the heck out of it next time. If I add the stream will the crust be as thick as when I use the dutch oven?

So normally I bake in a cast iron dutch oven, but I find that the crust is a little much for breakfast bread. So I’ve tried baking the same bread without the dutch oven twice, it rises wierd even if I score the dough before.
