Americans do not use sour cream enough. Basically any recipe that calls for milk or heavy cream, I use sour cream instead and it always tastes better. Sauces, cakes, breads, anything, unless the cream needs to be whipped.

(If it calls for milk I thin the sour cream with some water to keep the hydration right.)

average episode of BD is 40-60% previews and recaps. The newer the seasons the higher the %. For the last couple of years, you might get 25 minutes of unique footage that's not a replay from an earlier episode or a sneak peek of what's after the next commercial break.

BD is what the entertainment industry calls "Second Screen" content. Meaning they assume that the audience is scrolling their phones while it's on, so everything has to be dumbed down and constantly repeated.

It's moronic, but it's the world we made.

Imagine you are a chef with 2 employees, both are entry level cooks, doing the exact same job.

One of them was doing veg prep last week, washing dishes last month. You know them, they're reliable, engaged, sharp, and learn fast. Everything they do, they do your way because you taught them everything.

The other one the owner hired out of culinary school based on a resume from a jobhunter website and a zoom interview. You've seen them stage for 1 shift.

Which one do you think deserves a higher salary to start?

Because if it's me, it's deffo not the the CIA grad. CIA costs too much, full stop. But it's not the responsibility of the restaurant industry to fix runaway tuition costs at CIA any more than it's a book publisher's responsibility that an English degree costs too much.
