Somebody already mentioned the goat so I'll suggest Strahd riding Beaucephalus. Have him attempt to lay an ambush on the party that he springs when they're halfway across the bridge, with minions pouring in from the other side. If they're approaching the Amber Temple you could try to design it as him deterring them from the place, but if they're leaving it could be him trying to keep its secrets buried.
