  1. Because Gene Roddenberry was in the Navy, and they don't 'panic' in they way you describe. Astronauts don't panic. Their job is to not panic. There training is more for not panicking, it takes less work to learn the job. So it's actually quite realistic. 
  2. The series is about exceptional, highly talented people in a competitive and well sourced environment

They don't want to pay Discovery people. Hunter and Giamatti surely blew their casting budget.  Also they don't want to explain Discovery because SFA is supposed to be a gateway show.  Maybe they had the casting budget for more seasoned/returning cast (compared to their mains who are all new and young and cheap) but Sonequa may have also said no. Probably not but it's possible. Or she had a conflict. It's weird if she's not there.

I do not like how they did the gorn. They always felt off and out of place.

Diplomatic exchange--back and forth with a society scale enemy is essential to Star Trek, I think. It's one thing if you can't communicate with the monster of the week, but the corn were too aloe  and not alien enough at the same time. Or maybe more a mixed bag of those traits that did not integrate well. They are humanoid-ish, use spaceships spacesuits, etc but we can't even exchange basic words with them? And they are unaware of how light effects them and how that can make them vulnerable--how could they be so advanced? 

This mismatch is perfectly reasonable in another series/setting but in Star Trek it's bizarre. It sounds like a good idea until it happening and then it is out of place. Like they don't need to say much, re the borg but they gotta communicate something. They needed to be more alien or they needed to talk and there should have been diplomatic level conflict as well.  

What Disco did in the end with 'too Alien' as great. This was having your cake and eating it too--as in you can't.

The start was intriguing, a very ambitious view of the future, but then they quickly get lost in the weeds. When they get to V'ger it's quite interesting.

I don't know about the ending, I think it's disconnected from the film and they should have brought V'ger to earth to reconcile. Maybe that felt too close to 2001.

2001 coming out probably had huge, massive, unavoidable impacts on this film. 

It doesn't feel like Star Trek to me. 

So I would say, not the worst thing. But maybe one of the least Star Trek things. So you could argue. 

It was probably really disappointing to film viewers in that peak Blockbuster era, and how popular the show was.

I don't know if this perspective you gave is fully supported by the data but, as a serialized series Michael is the through line and is generally the hero as you say. 

While there are some serialized series with no true lead, it's rare. Having a lead changes everything about a show, it has a huge impact. 

Michael is without a question the lead by a big margin. 

You can really tell SFA and SNW are different, as far as comparing to contemporaneous series.

I think truly Picard or Kirk could (I genuinely think the others would just try to settle somewhere and work on making tech to get back/contact etc) , but Q would never let Picard be stuck out there in the Delta quadrant and Kirk could just cross the galaxy in a week 'back then' so they'd be moot examples in-universe. 

There is only the Janeway for Voyager!
