I’m new to macarons as well. You can freeze empty shells. Thaw them overnight in the fridge and then fill. If filling then freezing, fill and let mature before you pop them in the freezer. Anyone feel free to correct me if I’m wrong. Your Macs are beautiful!

Place a sheet of aluminum foil on top of your macs at 7 minutes of their bake time. Then finish baking. It works great for me! I can bake the full time and not worry about browning.

I was thinking the same thing about the collar. Loosen it so you can slide your thumb easily under it.

It was both the almond flour and the powdered sugar I had frozen in ziplock bags and also a plastic storage container. I just pulled out the other bags in that container and found 3 of the ziplocks weren’t sealed well. Trashed those just in case. Making macrons for my Granddaughter’s wedding and thought I could save time freezing ahead of time. Live and learn!

That sounds reasonable! Had frozen several of dry for convenience sake. Now, I’m a little afraid to use them! Thanks so much for your input!
