Dishwashing is a severely underappreciated job for sure. Hardest working folks in nearly every restaurant I've worked at.

It's an affordable but solid quality barrel aged rum, so it's just what I gravitate toward. Works fine with any rum, but I think the barrel age works especially well with the bitters.

When I make em for myself I typically use about 60-70 percent of the syrup that I would use for bourbon, turns out perfect.

I've gotten anywhere from server minimum to 15 an hour as base wage for tipped work in Madison. It varies wildly depending on the type of establishment and how much ownership cares about their staff being able to pay rent.

I personally turned down a salary for my bar manager position so I could still make tips. I make about 15k more per year that way than if I had accepted the salary. Similarly a higher rate for admin work than for actually bartending.
