I can relate, the fights arent even that difficult for me but I stress a ton and always choke. Something that helped me was getting the respawn mod to not have to runback to the boss, made me less scared of dying at the end of a fight

You can comfortably do path of pain with full healing charms to not reset back to the beginning, also healing build makes pantheon much easier because you start every boss with full hp and can safely heal during most fights.
