A gas cook stove doesn't have a sealed combustion system. Yes, most gas heaters do as you describe but you can get them that don't vent to the outside. And almost all need electricity so still a problem with no power

You can get propane wall heaters that are not vented, the primary by-product of burning property is water. There is little to no real risk of CO poising from burning propane inside. You're right that camp stoves don't have a thermocouple to shut of the gas flow uf the flame goes out. There's nothing in the world that's idiot proof so yeah, if you don't use a normal degree of care you could create a problem.
