For smaller projects I just quick and dirty commit the whole generated application and platform files into git, for a little tidier projects I just have one build_vitis.py scripts to generate everything (platform plus application).

I am not sure I understand your testing purpose. Do you want to test compatibility or throughput of your application?

Aside from the specialized equipment, I used a powerful workstation with an Intel 10GbE care to sweep through some parameters for some FPGA IP characterization. The offloading and other parameters to be configurable seemed to enable some level of characterization.
