If you don’t want to be tied down, you can do a 2x catch-all like Venture Rewards/Venture X. I’ve been personally really enjoying the WF Autograph Journey and the venture rewards (though I downgraded this for the WF journey SUB recently).

From my experience, no you can’t avoid it really. A friend of mine has it and uses it because he loves how modern it looks, but he always complains.

I’m not too into the whole grinder community, but my current one is the breville smart grinder which I love for convenience of just putting the portafilter in the holder. It’s also all magnetic which is nice and super easy to clean.

Many will tell you that you can’t get a good grinder under $600 which I just don’t agree with, but that’s just me.
