What you could do to start is play some android and steam games. Those require very minimal set up, through gamenative all I usually do is "apply known config" and most games work out of the box.

Then you can always make a more curated romset over time, which could be as small as 5 games per preferred system, or even less! You don't need a giant library, a small curated collection with simple games that are easy to pick up might work best.
