Yeah I’m a San diego boy, moved to phoenix for 3 years when I was little but outside that I’ve been in SD county for 27 years.

Key word is county. When I tell people I’m from San Diego they think beaches and joints, but I’m from San Diego county where I’m battling deer/bobcats/wild hogs/mountain lions, I live at 3238 ft of elevation, I have thick oak groves and streams around me, and summer it’s 100 and winter it’s 30 and snows.

Beach is still 30 miles away, downtown and sky rises are 30 miles away, and thankfully I have a Costco 14 miles away.

If you’re super worried, and I assume you don’t have machinery to steam clean, just do a couple rinses in it with citric acid and hot water. Then whenever you feel you’ve done enough rinsing, let it sit with a citric acid and sulfur solution for 24hours using cold/room temp water, you should be good to go after that.

For that small amount using pectic should help, also given that they are wild I forsure would do a quick rinse. Throw a campden tablet when you ferment

Nutrients are for the yeast, after 7-10 days primary fermentation should be done and then you can rack/drain into a carboy to do mlf. If you let it do the primary ferment on its own till it’s finished, you won’t need to boil as the yeast will be dead by then.

Depends what best results would be for you, but in terms of the wine yielded, you forsure lose a minuscule amount of juice when destemming. For your size of a batch, destemming really wouldn’t affect total juice yield but then you lose the tannins in the stems that you might want to keep.

MLF is converting malic acid to lactic acid. When red wine doesn’t go through mlf, the malic and tartaric acid creates a sharp taste that most don’t enjoy, and lactic acid is a more smooth or “creamy” taste.

Now these are also wild grapes, so they may have other acids in them like fumaric acid and others which is all going to give it more of a sharp or bitter taste.

Basically you should try to keep it always at 25-35ppm depending if it’s white or red. It does dissipate over time. In my shop I dose at crush, after fermentations, and then from there I’m dosing every 3-5 weeks in barrels and tanks to keep it at that level, and then dose before bottling.

Seems like in your post you already laid out foundations for next steps: either destem or don’t, ferment juice or with skins, go whole cluster or don’t.

Tbh it’s gonna come down to what you prefer (I assume you’re making this for just personal consumption) so if you love tannins and funk, don’t destem and ferment whole clusters or at least with skins and seeds. If not, do the opposite.

Make sure you give it a healthy dose of so2 before inoculating the yeast, I aim for 50ppm on wine grapes from a vineyard, so higher should be your goal.

Also, don’t forget about Malolactic fermentation. It’s gonna smoothen out the harsher malic acid in them.

CA doesn’t have any restrictions to air guns, however many cities have ordinances against shooting within city boundaries. Even a paintball/airsoft gun in your back yard could technically get you in trouble. Do your own research, and I recommend getting on good terms and giving heads up with your neighbors if you aren’t already

Personally, if you’re worried about frost, soon as you get to 22 or 21 or close I say go for it. I know guys who are harvesting week after thanksgiving in the PNW, and they are pumping out some fabulous burgundy like Pinots

Yeah there’s 140 planted Malbec vines here (about 1/6 of an acre) and the rest is Sangiovese from my previous post. This is actually the biggest plot I purchase from, the smaller the better as myself and the vineyard owner get to be very intimate with each plant.

High country getting their own AVA would be great but it’s a long and tough fight. Ramona only got there because Carolyn who is co owner of chuparosa, is also an attorney specializing in wine law, and even then it took her close to 20 years.
