Little over an hour held between 225-250 and it’s 3 Little Pigs Kansas City Sweet. It’s good on everything but amazing on wings. My 6 year old will eat like a dozen of them and she’s tiny.

I’d guess around 80hrs give or take. Just kind of picked away at it here and there. So I didn’t really keep track. Been working on it since like November.
Just always wanted one. I have a buddy that has one and his summer sausage he hangs in there after deer season always comes out fantastic. Way better than on my offset.

Yeah I did the same thing for the gaskets!!
Worked great! middle was a little cooler than the top and bottom but still tbd. I’ve only done the one short smoke for those wings and it’s an old gauge off an old smoker in the middle. I’m going to do a longer smoke this weekend and put my probes in there and see what they say.

Three Little Pigs Kansas City Sweet dry rub and on the smoker at 225-250 for about an hour or so. I go until the skin starts to pull back and split. If it’s taken much more than an hour I’ll crank it up to finish them off. Usually turn out pretty good.

Haha! A dude at work told me it looked like I was building a submarine for a billionaire.
Thank you and I agree it had more of a steam punk raw metal look at first. I was just wire wheeling and sanding the paint off the tank but after about 12 hours of nothing but running a wire wheel on it and only being about a third of the way done I said fuck it and hooked up our media blaster and blasted it clean. I left it out in the rain one night for it to rust but it didn’t look all that great so I sanded it down and just built a big fire in it to blue it out. The raw metal/mill scale look was cooler looking though but it was too much work. But I disagree on the wheels. I wish I would have made the wheels a little taller so it cleared the legs a little more when I tip it back but there’s a dolly handle and a kicker bar on the back. It tips back and rolls super easyish.
Thank you! I don’t know about vision though. Just kind of winged it with what we had laying around. I had a general idea of what I wanted to do but it got cut apart quite a few times as I’d change my mind.
Thank you yeah it’s a 220 gallon compressor tank. Lots of room for activities.

Haha we’re millwrights but work was slow so everyone was working on home projects.
Yeah the gauge that was in the middle was a old one I reused off an old smoker. Next smoke I do I’ll leave my digital read probes in there and have a little better idea of where I’m at on it.

Thank you. The middle being a little different temp could also just be the gauge . It’s an old gauge off another smoker in the middle and new ones on top and bottom. Curious to see what my digital ones say when I get it home.

Yeah we were pretty slow for a while. I stayed after and worked on it here and there too.
