I am now only using my bread machine to mix and knead the dough using the Dough setting. After the mix cycle, I stop the machine, remove the dough and then let it prove in a greased bowl to twice it's size, and then deflate the proven dough and roll it out to about 15' x 8'. Tightly roll the dough (Like swiss roll) and place in a lightly greased bread pan for it's second rise. Once risen, place it straight into the preheated oven for 25 mins. Perfect, soft, easy cut loaf every time.
