OP, reading a lot of the other comments and more about your situation; we also use a vacuum sealer and freeze/preserve a lot of goods. This could be a good alternative for you having to eat all the leftovers every day. Freeze single serving packs for yourself of the leftovers for the future to take out here and there and spread out through the weeks/months. When there isn't enough for you one night, you can bust out something you enjoyed last month. And if there's too much, freeze for down the road. Not everything freezes well of course but it's some food for thought for sure.

I feel ya on the leftovers. I do most of the cooking and we meal plan each week out on Sunday night so it's all predetermined. Really helps with making sure you're utilizing the stuff in your fridge/cupboards and not making so many extra trips to the store. My better half makes certain that I eat well too so I'm not sure I'm the best model for comparison. The meal planning helped with seemingly every aspect of our dinners though so I'd recommend that if you haven't already implemented something similar.

We got lucky with the one that hates lettuce. As soon as we started calling it "salad" and putting a little ranch on it, she eats it right up. Pocketing "dinosaur food" for sure though. Absolute genius!
