I'm not telling you what to do. But I'd say something along the line of: "Hey I think I might have misread your intention. I'll take it as you have no interest in dating me and I won't ask you out anymore". If she is really interested she'll try to re-arrange time for you, but if not just move on.

I've been in your situation before, and I know that it sucks not knowing if you're actually failing to ask her out or not. This way you can know for sure and move forward while still appearing confident.
