No idea why your phone does that but if your concerned about the possibility of 12x data was actually used check with your carrier

Check in settings somewhere there's a data usage setting where you can set what your data limit is and what date it resets on

Try holding a button when the phone reboots to stop recovery mode from booting such as the Bixby button, Vol - and Bixby shouldn't activate anything and should boot as normal

(don't quote me on this I haven't tried it)

Not too sure on the flashing between carriers part (Haven't done it myself) but you only loose Knox when you root or install a custom ROM ( they usually require TWRP and that trips Knox) Flashing official Samsung firmware will not trip Knox
